Quick and Easy Minestrone

Ingredients

  • 1 lb. ground beef or mild Italian sausage
  • 1/2 tsp. each dried Italian seasoning onion powder, and garlic powder
  • 1 carton 32 oz. beef or chicken broth, plus 1 cup water
  • 1 can 29 oz. Veg-All® Mixed Vegetables, drained
  • 1 can 16 oz. diced tomatoes, not drained
  • 1 can 15 oz. kidney beans, rinsed and drained
  • 1/2 cup uncooked elbow macaroni

Instructions

  • Cook meat in a Dutch oven 5 to 7 minutes over medium heat or until no longer pink; drain.
  • Sprinkle with Italian seasoning, onion powder and garlic powder; cook 30 seconds to release flavors.
  • Stir in broth, water, vegetables, tomatoes and beans; bring to a boil. Reduce heat, cover and cook 5 minutes.
  • Stir in macaroni; return mixture to a boil. Reduce heat to medium-high and simmer, uncovered, 5 to 7 minutes or until macaroni is tender.
